Fried aubergines with honey: a pleasure of the Gods

Dear guest, fried aubergines with honey are one of the most typical recipes of Andalusian cuisine. That is why I am going to give you some tricks so that you can try to make them in the kitchen of one of our wonderful villas.
The secret to making the fried aubergines crispy is to leave them soaked in milk for a minimum of 2 hours and cut them quite thinly. If we make aubergines sticks that are fatter, it will be more difficult to get it.
We reduce the honey sauce with a little soy sauce.
With all these tips we are going to make one of the best Andalusian recipes.
INGREDIENTS TO MAKE AUBERGINES WITH HONEY
• 1 small aubergine
• 70 grams of flour
• 70 grams of breadcrumbs
• 4 tablespoons of honey
• 1 tablespoon soy sauce
• Extra virgin olive oil
• 500 ml of milk
1.- The first thing to do is cleaning the aubergines, cutting them into very thin slices and letting them soak in the milk for at least 2 hours. This will make them crispier and less bitter later.
2.- We make a mixture in equal parts with the flour and the breadcrumbs.
3.- We dry the aubergines well and we pass them through that mixture.
4.- We fry in plenty of hot olive oil to make them very crisp.
5.- To make the honey and soy sauce, heat the honey in a saucepan over low heat and mix it with the soy sauce.
6.- We put to our fried aubergines honey and it is ready to enjoy it!
